Buttery Burrito

I am so amazed at the outpouring of love and support with regards to yesterday’s post.  Thank you to those of you who commented, sent me emails, sent me FB messages, or even just took the time to read my story.  It really means the world.  Seriously, if you have questions, concerns, or you just want to talk, email at [carly dot goldstein at yahoo dot com].

Well, because yesterday’s post was so heavy, today’s will be nice and easy.  Just lots of pictures of food.  Which, by the way, is simultaneously my favorite thing in the world and the bane of my existence.  Is anything worse than seeing pictures of delicious-looking food when you’re so starving that you’d eat your own arm?

My point is that you should definitely grab a snack or two before scrolling down.  I’ll wait for you…

My Wednesday morning started off with a repeat breakfast.  Plain Fage, Cinnamon Kashi, and strawberries.

I had a pizza bagel for lunch.  Childhood throwback, whaaaaat?!  Yep, a TJ’s Sprouted Wheat Bagel with 2 TBSP tomato sauce and mozzarella cheese.

I had green bean fries + ketchup for a snack before my second class of the day.  Yeah, definitely not filling.  Like, not at all.  I had to buy a Special K Protein Meal Bar before my workout.  And thank goodness I did, because it was a BEAST of a workout.  (Side note: WHY do I always type of “breast” when I want to write “beast.”  Seriously, this happens all the time.)

The workout included 30 sweaty minutes on the ARC Trainer + an hour-long spin class.  I forgot how much I like spinning!  I so wish that it was socially acceptable to bust out singing during group exercise classes.  The music was seriously rockin’ and I really had to contain myself.

Once home, the nighttime eating commenced.  Dinner was a La Tortilla Factory Wheat Tortilla, a quarter of an avocado, a half-cup of black beans, some taco seasoning, and salsa. This burrito was, for lack of a better word, buttery.  I think it was the fat from the avocado and the black beans.  So creamy!    It was definitely the highlight meal of my day.  I think a sweaty jockstrap would have tasted amazing at that point, though.  I was so frickin’ hungry.

And now that I’ve talked about sweaty jockstraps, let me show you pictures of my dinner.  So appetizing!

I ate this baby with some raw veg on the side.

“Dessert” was two ounces of turkey, a quarter cup of peanuts, and an apple.

Nope, still not full. I then had a tangerine popsicle.

And then I pretty much snacked for the rest of the night.  I was just so starving!  That workout really revved my metabolism.  (Or I was just feeling snacky.)  I think I had some more peanuts, a little bowl of cereal, and a small piece of homemade pizza (no crust!) leftover from the weekend.  Finally, I was full enough to get to bed.

Okay, now I need to get back to watching 1600 Penn.  Somebody’s being rrrrreallllll productive before finals week.  Would you believe it if I told you I was just saving up my energy?

Nope, I wouldn’t believe it either.

  1. Your bagel looks amazing. You dip your green beans in ketchup!? I have never heard of that but I adore ketchup so I would probably become obsessed very quickly.

  2. That pizza bagel looks amazing!! Who needs Bagel Bites when you can have that?? So much better!

    Is that ketchup that I see next to your green beans? I love that! People always think that I am weird when I say I like ketchup with my green beans. Those silly people! ;)

  6. Luckily I WAS in the middle of snacking before I read your post or I’d be experiencing some serious foodie envy! I’m especially eyeing up those pizza bagels – childhood throwback for sure. And remember pizza pockets? Must.get.cheese.now :shock:

    Oh, and saving up my energy before finals week has never failed me in the past ;)

  8. Bagel pizzas! Oh my gosh, reminded me of bagel bites and now I have the theme song in my head “pizza in the morning, pizza in the evening, pizza at suppertime. when pizza’s on a bagel, you can have pizza anytime!” I also want to say thank you for the idea of smashing the black beans into a spread instead of fighting them when they fall out of the burrito… I never thought of that before and always get so mad when beans are falling out of my taco/burrito/mouth.

    • Oh my goodness, now that’s stuck in my head! And ME TOO! I hate it. It’s especially difficult with black beans, maybe because they’re so small? This totally solves that issue.

  9. The pizza bagels look sooooooo good! And the burrito has my two current favorite foods: black beans and avocado. Yum!
