I’m busy. I feel like I’m busy all the time.
You guys are probably way busier than I am, juggling kids and work and school and exercise and friends and family and eating and basic hygiene and… You get the picture.
I’m busy, you’re busy, we’re all varying degrees of busy. And, as much as I love cooking, I’d much rather spend my free time watching How I Met Your Mother. You get it.
This is precisely why I like to prep food on Sundays. Sometimes I make elaborate meals (like chicken salad- reeallll elaborate) and sometimes I just whip up some easy-to-throw-together components. Either way, it makes my life about 10,000x less stressful. Which is pretty spectacular since I’m convinced that I’m going to die of over-stress because I overreact to everything and blow everything out of proportion. So anything that lessens my stress levels? Sign me up.
This week, I prepped…
1. Quinoa
I just threw 1 cup of quinoa into a pot with 2 cups of water. Bring it to a boil, cover and simmer. Done.
2. Black beans (from scratch)
I bought a bag of black beans for $0.36 at Target months ago! So cheap! I soaked ‘em for a few hours and then threw them into the Crockpot with enough water to cover them, half a diced onion, salt, pepper, and garlic powder. Cooked them for about 4 hours, and they were perfect. Way better than canned beans. I put some in the fridge and froze the rest. It made a ton!
3. Ground Taco Turkey
1.4 lbs turkey. Half a jar of salsa. Some cayenne, cumin, paprika, red pepper flakes, garlic powder, s&p. Half a diced onion sautéed in 1/2 tablespoon EVOO. Easy Peasy. Plus, I proportioned it out into 5 little baggies so I don’t have to measure it every time I want some.
Just three things. Easy. So freaking easy.
With those ingredients, I’ve been making (or plan to make)…
1. Quinoa, black bean, avocado, and spinach wraps!
2. Burritos with taco turkey meat, mexican blend cheese, Chobani (as sour cream), beans, and avocado
3. Spinach salads with veggies, beans, and quinoa
4. Quesadillas with cheese and taco turkey
5. Beans and quinoa
It’s easy to make the meals seem diverse and different so I don’t get bored. Plus, everything is totally delish. Especially the quinoa, bean, avocado wraps. Mmmmm.
Ugh, sorry for the totally janky pics. I took them at night so the lighting was horrible. Yuck!

I’m also new to this, e.g. the other day I started looking around the web for ideas for make ahead lunches (I more or less every day make lunch for myself and the boyfriend in the morning, before work, ouch!) and found that meatballs and rice can be frozen – well, I never knew
haha. Basic but maybe good tip for someone, I like the cut the potatoes and soak in water the day before so in the morning I just have to cook them (for puree, boiled potatoes, etc). Keep the ideas coming : ))

totally not yuck! That wrap sounds so good, I love how you wrapped it up like a chipotle burriot and good to go! I wish I liked beans though, I just cannot bring myself to eat them, I hate the texture!

Ugh, it was sooo good. It’s my new food obsession! It would be fantastic even without the beans. The avocado is what makes it spectacular

I love your idea for wraps! Avocados, beans and quinoa are probably my favorite healthy foods. A for my prep, on Sundays I wash all of my produce in a vinegar solution to clean it and then take a BIG bag of fruit into work on Monday. I actually have a fruit bowl on my desk for healthy snacks when I think I am starving at 3pm

You are so good to prep all of this ahead of time! The most food prep I can do is chop a couple of carrots
I do love making beans in the slow-cooker, though. SO cheap and hardly takes any more time!

I’d never cooked beans fresh before and I don’t know if I’ll ever go back to canned. The texture is just unbeatable!

You’re smart to prep food.. I do that– although lately I’ve been lately and just grabbing “snacky” kinda lunches lol but I used to do the same with quinoa.. def makes it easier

Yes yes yes to all of this! I try to prep food for the week but it hardly ever stretches past Tuesday, ha. The quinoa thing is clutch- if I don’t have quinoa on hand, I’ll make a big pot of rice on Sunday. Makes meals during the week so much quicker!

I seriously admire and envy anyone who preps food for the week on the weekends. I am really good about food planning, but am terrible when it comes to food prepping. This is probably why by the time I get home from work and the gym I am eating dinner at 8 p.m.!!

I’m the exact opposite- I usually prep a few things but I can’t plan what I’ll eat each night. In fact, I find Sunday food prep kind of cathartic, haha. It’s just so relaxing and it makes me feel so productive.
