Laraballs (Homemade Larabars)

Welcome to Carly Complains About Her Self-Inflicted Sugarless Life, Part 10 Billion.

I’m still not eating sugar. You guys likely know this because I talk about it all the livelong day.  Maybe I should just quit this “let’s quit sugar” thing, but when I get something in my head, I have to finish it out.

17 more days, friends.  And until then, I need some faux dessert to get me through it.

So, I made some homemade Larabars.  Except, I rolled them into balls so I’ve been calling them Laraballs.  Good one, right?

Peanut Butter Cookie Laraballs

Makes 12 Balls

1 Cup Chopped Dates

1 Cup Peanuts

Put the dates into the food processor and pulse until a paste-like texture is achieved.  You may have to scrape down the sides and the blade throughout this process, as the dates are sticky.

Add the peanuts and pulse until the mixture is bonded together and shapeable.

Roll into balls!  Store in the refrigerator.

Nutrition: 121 calories; 6g fat; 13.5g carbs; 2g fiber; 3.2g protein

Almond Butter + Jam Laraballs

Makes 16 balls 

½ Cup Chopped Dates

1 Cup Dried, unsweetened cherries

1 Cup Almonds

Put the dates and cherries into the food processor and pulse!

Add the almonds and continue to blend until the almonds are ground and incorporated into the dried fruit mixture.

Form into balls and store in the fridge.

Nutrition: 95 calories; 4.7g fat; 11g carbs; 1.9g fiber; 2g protein

These are perfect little energy balls (heh, balls).  Seriously though, these are totally delish.  If you like Larabars, you’ll love these.  Guaranteed.

  3. I love making homemade Larabars. I have one recipe that has cacao and coconut. Yum! I’ve never tried the dates and peanuts but I have all of the ingredients in my pantry right now. I will have to give that a try!
